About two pounds of tri-colored carrots
Five tablespoons of melted butter
One medium sweet onion cut into thin pieces
1/3 cup honey
Salt & pepper to taste
1. Wash carrots and cut into one inch pieces. For thicker carrots opt to cut smaller. Put into slow cooker with the onions.
2. Pour the melted butter all over the carrots and mix so the carrots are well coated.
3. Mix in the honey and add salt and pepper to taste.
4. Cook on low for four hours or until carrots are tender.
Store left overs with any liquid that accumulates in the slow cooker to avoid them drying out when reheating.
Regular carrots can be used in place of the tri-colored carrots. The only place I’d ever seen the tri-colored carrots in Trader Joes for $2.50 for a 3lb bag – well worth it!
